
新加坡的“海南鸡饭”之所以风靡全球,首先是所卖的鸡肉很有特色:鸡肉鲜嫩,骨头周围的肉呈桃色,鸡骨髓还带着血,皮与肉之间有一层喱状的胶汁。新加坡厨师又对鸡饭进行了改良,加入了当地产的香料———香兰叶,使海南鸡饭更具风味特色。其次,所煮的饭是用泰国香米加鸡汤、鸡油一起煮,成饭粒粒成形,松软滋润,外面还包着的一层鸡油,使米饭光亮出彩,香气诱人。三是一起上桌的辣椒酱,辣中微酸、鲜美宜人,具有浓郁的东南亚特色。除此之外,新加坡“海南鸡饭”实行的是套餐形式,符合西方人的分餐习惯。现在,海南鸡饭已经成了新加坡最负盛名的美食之一。
